Thyme is an evergreen perennial shrub. The leaves are oval and gray-green, with lavender or white flowers. Native to Spain and the Mediterranean region, it is now also grown in Asia, Russia and the United States. Spain is currently the largest producer of its essential oils. There are two types of thyme essential oil, one is red thyme (thyme thymol) essential oil, which has a strong herbal aroma; the other is white thyme (thyme linalool) essential oil, which has a lighter and sweet smell.
The original meaning of "thymos" in the Greek word for thyme is “aroma”. Thyme was used as a medicinal herb in ancient Greece, Egypt, and Rome. For example, it was used as an incense for worship in Greek temples, and one of the raw materials used to prevent rot in Egypt. In the Middle Ages, thyme was used to inspire warriors, hoping they would have the courage to fight the enemy.
